At the heart of Jonathan and Hélène’s project is a field bordering the former 1er Rang of Saint-Arsène in the Lower St. Lawrence region. Hélène has her bees; Jonathan has his tractors. They gather around the stills to maintain the flames, while keeping agriculture and the ancient art of distillation alive.
